These essential everyday dishes are mainstays of the Vietnamese dining table and introduce students to the basic techniques necessary to master Vietnamese cookery from your own kitchen. Your 3-hour class will be introducing you to the fascinating art of Vietnamese cuisine with a brief talk about the special ingredients, utensils used, cooking demonstrations and you will have 'hands- on' experience making each dish. You will go to the market, learn stylistically appropriate cooking techniques and will gain hands-on experience in preparing each dish.
Option I: The 'Essentials' Green Mango Cooking Class includes the following 5 menus items:
1. Fresh vegetable rolls
Crunchy vegetables noodles wrapped around rice paper, served with chili lime vinaigrette.
2. Banana blossom salad with chicken
Shredded chicken infused peppermint, banana blossom, fresh herbs chili lime vinaigrette.
3. Pho bo
Famous beef pho, fresh rice noddle in a cinnamon star anise broth
4. Bun Ca Tim Tron
Wok tossed lemongrass marinated eggplant with turmeric leaves and rice-paddies, peanut sesame crust, shallot chip, rice noodles, fresh herbs chili lime fish sauce.
5. Mango sticky rice
Warmed sticky rice, mango served with mango puree and Malibu coconut sauce

1. Green mango shrimp salad
Vietnamese green mango salad marinated in zesty ginger tamarind dressing
2. Chicken coconut soup
Shredded chicken in a spicy lemongrass coconut sour broth
3. Duck spring rolls
Green tea smoked duck rolls served with balsamic strawberry dip
4. BBQ pork in banana leaf
Chargrilled fresh turmeric marinated pork wrapped in banana leaf
5. Red sticky rice
Sticky rice, served with Raspberry vodka purple dragon fruit coconut sauce
These dishes emphasize the delicate balancing act between sweet, sour and bitter ingredients with recipes that can be easily adapted to suit individual tastes. This three hours course is for those who want a practical hands-on gourmet experience. It includes a talk on the art of Vietnamese gastronomy, vegetable selection and preparation, and appropriate usage of herbs & spices. The practical includes cooking, cutting techniques and preparation of exquisite garnishes.


Option III: The 'Street Eats' of Green Mango Cooking Class: Hanoi Street Stall Food
1. Smokey eggplant salad
Char-grilled eggplant and butter leaf lettuce with chili lime vinaigrette.
2. Pho Ngan
Version of Pho vit, sliced ducks in a rich duck broth, rice noodle Served with fresh herbs.
3. Lemongrass BBQ shrimps in banana leaf
Smoked lemongrass and fresh turmeric marinated shrimps wrapped in banana leaf.
4. Wok tossed beef rolls
Lemongrass wok tossed beef rolls served with chili garlic fish sauce.
5. Banana fritter
Coconut batter banana fritter served with honey.


Option IV:
1. Fusion salad (a great dish for home parties)
Rows of pineapple, star fruit, cucumber, tomato and tomato rose topped with nuoc mam.
2. Bun cha Hanoi
BBQ pork patties served with fresh herbs, chill rice noodles, chili lime vinaigrette.
3. Chicken cups
Minced chicken and Shiitake mushroom in ginger scallion, iceberg cups topped with Hoisincashew nut.
4. The traditional deep-fried rolls
Crispy spring rolls with pork and shiitake mushroom, good ear mushroom, egg, sprout vermicelli noodle and spring onion.
5. Blue sticky rice
Blue butter flower pea infused sticky rice, mango and coconut served with Midori mango coconut sauce.
This 3 hours' class features the essential and extremely delicious comfort foods found on the streets of Hanoi. 'Street food' is the Vietnamese daily comfort food and like Bistro-style dining, each stall specializes in a few dishes expertly prepared to cater to their loyal and dedicated followers. Option V: The 'Veggo Eats' of Green Mango Cooking Class: Old quarter Stall Food
1. Veggie rolls
Crunchy vegetables noodles wrapped around rice paper, served with soya chili lime vinaigrette.
2. Tofu eggplant clay pot
Caramelized cubed tofu and eggplant in a light soy sauce broth in a rich earthy clay.
3. Tomato and garlic soup
Plum tomato in a garlic tamarind soup.
4. Braised banana flower salad
Shredded banana flower with sweet basil/pepper mint, peanut sesame sugar lime juice to taste.
5. Tropical fruit salad
Seasonal fruit salad, mango, watermelon, banana, dragon fruit, pineapple tossed in a lemongrass/ginger syrup and fresh mint.

Classes are held daily from 09:00am; 10:00am; 11:00am; 1:00pm 2:00pm; 3:00pm; 4:00pm (Each class) includes: local market tour, food recipe given by email and a sit-down meal of the prepared menu items.
